Why? Because it is officially camping season. Granted, people have been camping for weeks now. (Those brave enough will camp year round.)

For me, however, late May tends to be the earliest I get out into the woods. So Memorial Day weekend is how I gauge whether it's time to dig out the old bins of camping gear, wash out the coolers, and see how much I can pack into the back of my car.

I always have to make sure I grab the essentials: strawberries, my paddle board, a light-up collar for my dog, and a couple of books I'll attempt to read (in the peace and quiet of the woods I make my own distractions.)

One of my go-to camping recipes is... wait for it... tacos in a bag. All food tastes better in the woods, but Mexican food is just supreme when you're cooking over the fire or on a small propane stove. But, you get pretty gross in the woods and finger foods start to seem... a little iffy.

Therefore it was a miracle when I found online the genius idea of taco in a bag. More like nachos, you buy those mini bags of chips (plain tortilla, Doritos, potato, you name it) and put inside whatever your preferred taco toppings are. You can eat it with a fork, plus it's a little more exciting to put together.

I guess it's time to start planning my first trip of the year...

Last year my fluffball Momo took her first camping trip. Making herself at home on the air mattress, finding the biggest sticks (more like branches) and running with them, braving the water and getting on the paddleboard... I think she had a good time. In fact, I know she did because she was exhausted by the time we got home.
